Primary processing converts raw food materials into basic usable ingredients. Examples include milling wheat into flour, pasteurising raw milk, refining sugar cane into sugar, and slaughtering and butchering animals into cuts of meat. Secondary processing transforms these primary ingredients into more complex finished products: flour into bread, milk into cheese or yoghurt, potatoes into crisps, and cocoa beans into chocolate. Food additives are substances added during processing for specific purposes. Preservatives (e.g. sulphur dioxide in dried fruit) prevent microbial growth and extend shelf life, reducing food waste. Colourants improve visual appeal (e.g. annatto in cheese), flavourings restore taste lost during processing, and emulsifiers (e.g. lecithin) allow oil and water to mix in products like mayonnaise and ice cream. Additives have benefits: they make food safer (preservatives prevent food poisoning), more convenient (longer shelf life), and more appealing. However, there are concerns: some synthetic colourants have been linked to hyperactivity in children, excessive preservatives may cause allergic reactions, and the ease of using additives enables ultra-processed foods
Exam Tips: Always distinguish clearly between primary and secondary processing with specific examples. | When discussing additives, categorise them by function (preservatives, colourants, etc.) and give examples. | For GM food, present both the potential benefits (nutrition, yield) and concerns (health, environment, ethics). | Learn the definition of fortification and be able to give at least two real examples used in the UK.
Common Errors: ✗ All food additives are artificial and harmful. ✓ Many additives are natural (e.g. citric acid from citrus fruits, beetroot red colouring). All approved additives have been tested for safety, and are only permitted at levels far below any harmful dose. ✗ E numbers are all artificial chemicals. ✓ E numbers include natural substances too — E300 is vitamin C (ascorbic acid), E101 is riboflavin (vitamin B2). The E number simply means the additive has been approved for EU use. ✗ GM food is dangerous to eat. ✓ There is no consistent scientific evidence that approved GM foods are harmful to eat.
