Main Content (35 minutes)
Key Fact: Food labels are legally required to provide: name of the food, ingredients list (in descending order of weight), allergen information, net quantity, use-by or best-before date, storage instructions, and name/address of the manufacturer.
Key Fact: The traffic light labelling system uses colour coding: green (low — healthier choice), amber (moderate), red (high — eat in smaller amounts or less often) for fat, saturated fat, sugars, and salt.
Key Fact: Use-by dates are about safety: food should NOT be eaten after its use-by date, even if it looks and smells fine (particularly for high-risk foods like meat and dairy).
Key Fact: Best-before dates are about quality: food is at its best before this date but is usually still safe to eat afterwards (e.g. dried pasta, tinned goods).
Key Fact: The 14 major allergens that must be declared on labels are: celery, cereals containing gluten, crustaceans, eggs, fish, lupin, milk, molluscs, mustard, nuts, peanuts, sesame, soybeans, and sulphur dioxide.
Key Fact: Nutritional information must show energy (kJ/kcal), fat, saturated fat, carbohydrate, sugars, protein, and salt per 100g (and often per serving).

Attempt a past-paper style question on food labelling & marketing from the exam board past paper finder (see Resources), then mark it against the scheme.
Exam Tips: Know the difference between use-by and best-before — this is a very common exam question. | When asked about traffic light labels, state what each colour means AND which nutrients are colour-coded (fat, saturated fat, sugars, salt). | Be ready to list at least 4 of the 14 allergens — examiners do not usually require all 14. | When discussing marketing, always explain HOW a technique influences consumer behaviour, not just what it is.
Common Errors: ✗ Best-before and use-by dates mean the same thing. ✓ Use-by dates are about food safety — food must not be eaten after this date. Best-before dates are about quality — food may still be safe afterwards. ✗ If a food has a green traffic light it is always healthy. ✓ A green traffic light means the food is low in that specific nutrient (fat, saturated fat, sugar, or salt). A food could be low in fat but high in sugar, so you need to check all four indicators. ✗ 'No added sugar' means the product contains no sugar. ✓ 'No added sugar' means no sugar has been added during processing, but the product may still contain naturally occurring sugars (e.g. from fruit). ✗ All food labels are voluntary. ✓
