Main Content (35 minutes)
Key Fact: The 4 Cs of food safety are: Cross-contamination prevention, Cleaning, Chilling, and Cooking.
Key Fact: Cross-contamination prevention: use separate boards, wash hands after handling raw meat, store raw foods below cooked foods.
Key Fact: Cleaning: wash and disinfect all surfaces, equipment, and hands before and after food preparation.
Key Fact: Chilling: keep the fridge at 0–5°C, the freezer at −18°C or below; never put hot food directly in the fridge.
Key Fact: Cooking: food must reach a core temperature of at least 75°C (UK) or 70°C for 2 minutes (EU); use a food thermometer to check.
Key Fact: Personal hygiene includes: washing hands with soap and warm water, tying back hair, wearing a clean apron, covering cuts with blue waterproof plasters, and not working when ill.

Extended Answer
Extended question: Full-Mark Response Explain the 4 Cs of food safety and how each one helps prevent food poisoning. (8 marks) <div class="
The 4 Cs of food safety are Cross-contamination prevention, Cleaning, Chilling, and Cooking. Cross-contamination prevention involves keeping raw and ready-to-eat foods separate: using colour-coded chopping boards (e.g. red for raw meat), storing raw meat on the bottom fridge shelf so juices cannot drip onto other foods, and washing hands thoroughly after handling raw foods. This prevents harmful bacteria transferring from contaminated to safe food. Cleaning means washing and disinfecting all surfaces, utensils, and equipment before and after food preparation, as well as maintaining personal hygiene — washing hands with soap and warm water for at least 20 seconds, wearing clean aprons, and covering cuts with blue waterproof plasters. This removes bacteria from surfaces and hands, reducing the risk of transfer. Chilling means keeping perishable food below 5°C in the fridge (or −18°C in the freezer) to slow or stop bacterial multiplication, and following the 90-minute rule so food does not remain in the danger zone (5–63°C) for extended periods. Cooking means heating food to a core temperature of at least 75°C, checked with a food thermometer, to kill most harmful bacteria. Together,
Exam Tips: Always mention the 4 Cs when asked about food safety — this is a mark-scheme favourite. | Be specific about temperatures: fridge 0–5°C, freezer −18°C, core cooking temp 75°C, danger zone 5–63°C. | When asked about personal hygiene, list at least four practices: handwashing, clean apron, tied-back hair, covered cuts, no jewellery, not working when ill. | For kitchen design questions, focus on how the layout prevents cross-contamination (separate areas for raw and cooked food).
Common Errors: ✗ You can put hot food straight in the fridge. ✓ Hot food should be cooled as quickly as possible (within 90 minutes) before being placed in the fridge, to avoid raising the fridge temperature. ✗ Rinsing raw chicken removes bacteria and makes it safe. ✓ Rinsing raw chicken spreads bacteria around the sink and work surfaces through water splashing, increasing the risk of cross-contamination. Cooking is the only way to kill the bacteria. ✗ A quick rinse under the tap is enough handwashing. ✓ Proper handwashing requires soap, warm water, rubbing all surfaces of the hands for at least 20 seconds, then rinsing and drying with a clean towel. ✗ Food is safe as long as it is cooked. ✓ Food must reac
