Key Fact: Bicarbonate of soda: requires an acid to activate (buttermilk, lemon juice, vinegar). Produces CO₂ immediately on mixing. Used in: gingerbread, soda bread, chocolate cakes (cocoa is acidic). Using too much gives a soapy taste.
Key Fact: Baking powder: self-contained — contains bicarbonate of soda + cream of tartar (acid). Activated by moisture and heat. Double-acting baking powder releases some gas on mixing and more on heating. Used in: cakes, scones, biscuits.

Chemical and biological raising agents both produce gas to aerate baked goods, but they differ fundamentally in their mechanism, speed, and applications. Chemical raising agents (baking powder, bicarbonate of soda) produce CO₂ through chemical reactions. Baking powder contains both bicarbonate of soda and cream of tartar — moisture activates the reaction, and heat accelerates it. Bicarbonate of soda alone requires an acidic ingredient to activate it. Chemical raising agents work quickly, producing gas as soon as they are mixed with liquid, and continue producing gas during heating. Chemical raising agents are used in cakes, scones, biscuits, and quick breads where speed is needed. They produce a fine, even texture and require no proving time. However, they have limitations: the reaction is fixed (can't be controlled once activated), and too much produces a soapy taste or causes collapse. Biological raising agents (yeast) produce CO₂ through fermentation — a living process. Yeast feeds on sugars in flour, producing CO₂ and ethanol. Common Errors: ✗ Baking powder and bicarbonate of soda are the same thing. ✓ Baking powder contains bicarbonate of soda PLUS cream of tartar (acid). Bicarbonate of soda alone needs an acidic ingredient to activate it. Using the wrong one affects the rise and flavour of the product. ✗ More raising agent means a better rise. ✓ Too much raising agent causes the product to rise too rapidly, then collapse because the protein/starch structure hasn't set sufficiently to support the expanded gas.
